cooking with flour

I've jumped into the Good to the Grain cookbook. I had previously tried the Oatmeal Pancakes and I fell in LOVE with them which is what led me to check out the book from the library.

I like this book b/c it breaks down several different types of flours. She explains what each tastes like and what it will bring to the recipes. Some of them are even gluten free.

She writes a chapter using her own multi-grain flour mix. It's a mix of 5 flours, whole wheat, oat, barley, millet and rye. With this mix you can make waffles, pancakes and baguettes. You can even sub out this mix in other recipes. I think waffles and pancakes are the most forgiving.

Fortunately for us, we live near Bob's Red Mill. The kids and I ventured out there yesterday to walk around, have lunch and pick up our special flours. It was a blast. It's painted red (duh!) and has a great little wooded area and water wheel spinning out front. The girls got a huge kick out of it. After our lunch they got tokens for free cookies. I almost forgot to buy our flour we were having so much fun.

Here's her mix:

1 cup whole wheat flour
1 cup oat flour*
1 cup barley flour
1/2 cup millet (gluten-free)
1/2 cup rye flour

*You can grind your own in your food processor using whole oats. I got a gigantic bag from Azure (their site is down right now so i can't link) that I've been grinding like crazy. This also goes into the oatmeal pancakes so it's nice to have some already ground.


It's all about having fun with cooking.

You're so talented in the kitchen...it would never even occur to me to make my own flour mix!
